This Warming White Bean & Veggie Soup is the perfect meal for a cozy day. We love to make this soup on rainy Sundays after doing an outdoor activity or grabbing a fresh loaf of sourdough to pair it with. This soup has incredible skin health benefits:

  • Beans are one of my go-to protein sources for clear skin because of their fibre & mineral content to help support detoxification and provide nutrients for the skin
  • Carrots contain antioxidants that help give our a skin that healthy “glow” we all know and love
  • Choosing organic produce gives your body a variety of nutrients needed to keep skin clear like selenium, magnesium, manganese, potassium, Vitamin C and zinc.
  • Adding dried or fresh herbs also packs in a ton of antioxidant protection to help the skin speed up scar recovery and protect it from environmental toxins.

This Warming White Bean & Veggie Soup makes for the best and easiest lunch leftovers, too! We make it in a large pot and then portion it into small jars.

Warming White Bean & Veggie Soup (Vegan Option)

A warm and hearty soup perfect for cozy days. Packed with colourful veggies for antioxidants and beans for detox support and minerals.

Ingredients

  • 5 cups of free-range organic chicken bone broth (about 2 containers) or sub vegetable broth/water

  • 1/4 cup finely chopped onion or leeks

  • 3 garlic cloves, minced

  • 3 medium sized carrots, chopped

  • 2 large yellow potatoes, diced into small cubes

  • 2 handfuls green beans, chopped into 2-inch pieces

  • 1 bunch of carrot top greens or parsley

  • 1 small can of tomato paste or 1 small jar of tomato sauce

  • 1 can of white beans

  • The juice of 2 lemons

  • Spices: a shake of turmeric, paprika, garlic powder, Italian herbs, salt and pepper, all to taste

Directions

  • In a large pot, add the bone broth, vegetable broth or water.
  • Chop all of your veggies and add them to the pot (onion, garlic, carrots, potatoes, green beans, greens or parsley). Add the spices too. Let the soup cook until the potatoes are fully cooked through.
  • Rinse and drain the can of beans and add those to the pot with the tomato sauce plus more salt and pepper to taste.
  • Once fully cooked and fragrant, turn the heat off and add the lemon juice. Stir well, serve warm with a thick slice of sourdough bread and more salt to taste. I also like to drizzle mine in olive oil. Delish!
