These waffles are an easy, classic recipe perfect for Sunday mornings. I love topping them with lots of fresh fruit and maple syrup, but they also serve as a fantastic leftover snack toasted and topped with almond butter. Put on some Jack Johnson, que the rainfall and whip up these pancakes!
Gluten-Free Blueberry Waffles

We woke up craving waffles, so waffles it was! I scanned the internet through tons of recipes for gluten-free waffles, but they were all much to confusing for my kitchen and my half-asleep state this morning. Therefore, I decided to simplify and tweak a recipe to make my own Blueberry Waffles! They're pretty darn good for gluten-free, and if you load em' up with some delicious toppings then you're in for a real treat.

Ingredients
- 2 cups all-purpose gluten-free flour
- 2 cups almond milk (or soy)
- 1 egg
- 1 tsp vanilla extract
- 2 tsp lemon juice
- 3 tbsp liquid sweetener (agave, maple syrup, honey)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp coconut oil, melted
- 1/2 cup blueberries
- *Add water if mixture is not liquidy enough
Instructions
- Mix all ingredients in large bowl.
- Wait for waffle maker to heat and then take off when crispy and golden.

- Enjoy with my favourite toppings: blueberries, almond butter, coconut and maple syrup
