Cranberry Coconut (Christmas) Granola

My past two weeks in Berlin have been crazy. I have been meeting awesome people, eating delicious food, working hard and speed-walking around town like there’s no tomorrow. A fellow blogger and friend, Kaimo from Travel Maker Kai, suggested that I start using my blog as a place to write about my adventures as well. It’s going to be tough to summarize every little detail, but hopefully I can make your day a little more interesting by sharing my adventures.

Kaimo and I ventured our way into the Markthalle Neun in Kreuzberg for some foodie adventures (what else?). The Markthalle is always buzzing with people and the smells are wonderful! Kai and I each got a Vietnamese Summer Roll (rice paper roll with veggies) with a vegan peanut dipping sauce on the side. For dessert, we devoured some plantain chips and of course, a slice of heaven/raw vegan cheesecake from Sunday Burgers. Kai took some great pictures in this blog post here

This past weekend, one of my closest friends came to visit me in Berlin, which was the best thing ever! We played tourists and explored the city. We went crazy for Vegan Indian food at Goura Pakora, oo’ed and aww’ed over an all-vegetarian homemade brunch event, enjoyed some Sisho Burgers and maybe ate one too many Brezeln…

But of course all of this fun has to come to an end and real life must kick in; which, if you ask me, ain’t so bad! Especially if you’ve got this jar of Cranberry Coconut (Christmas) Granola sitting in your pantry…

So we all know Christmas is approaching and I know that everyone is secretly so excited (I know I am) and I don’t know about you guys, but I start to brainstorm for Christmas presents waaay too early. One thing that really saved me last year was homemade granola. Everyone loves granola! I would go to Costco, stock up on ingredients, go home and bake big batches of my Cinnamon Crunch Granola and then gift them in mason jars wrapped in ribbon. Flawless? I think so.

This year, I would like to present you with a new and improved Cranberry Coconut (Christmas) Granola! This recipe is super tasty, plus it’s red and white themed, so it scores some major bonus points in my books! Eat it, gift it, share it with your loved ones.

Okay, okay, I know Christmas is still pretty far away, but I just can’t contain my excitement. I hope you enjoy it as much as I enjoyed making it! X

Cranberry Coconut (Christmas) Granola
Serves 10
A fruity, crunchy, delicious granola just in time for Christmas gift giving!

Ingredients
  1. 4 cups oats
  2. 1 cup dried cranberries
  3. 1/4 cup chopped dates
  4. 1 cup shredded coconut
  5. 1/2 cup chopped almonds
  6. 1/2 cup chopped walnuts
  7. 1/2 cup honey, agave or maple syrup (I used honey)
  8. 1/4 cup melted coconut oil
  9. 4 tsp cinnamon
  10. 1 tbsp freshly grated ginger
Instructions
  1. Mix all of the ingredients together in a bowl until everything is fully coated.
  2. Bake at 350F for 30-35 minutes, turning/mixing halfway.
Notes
  1. Enjoy as a breakfast or snack, with almond milk and fresh fruit, as granola bites or with coconut yoghurt in a parfait.
